In honor of the town where the Mexican Army overcame the French Forces in 1862! We had so much fun last week making tacos, we thought you all should get in on the flavor too! This week we've created a delicious pairing of Miller Beef Ranch's Brisket, smoked to perfection by our friend Ginger, then shredded and coated in our house made chipotle in adobe sauce. We've made a "Maiz de Gallo", think Pico de Gallo with no tomatoes. This is served atop a bed of spinach with heirloom tomatoes, lime crema, Swanky Roots spicy micros and cotija cheese. Add avocado and/or choose local spinach from our friends at Zac Earl Farms!
